Artisan Greek Salad
Delicious served with grilled pita bread.
2 heads Tanimura & Antle Artisan® Lettuce
2 Tanimura & Antle Artisan® Sweet Italian Red Onions, thinly sliced
1-1/3 cups red or yellow teardrop tomatoes, halved
1 cup sliced cucumber
1/2 cup pitted Kalamata olives, halved
Greek Vinaigrette (see recipe here)
1/4 cup crumbled Feta cheese
1. Cut core end of lettuce to release leaves; cut leaves crosswise in half. Rinse; drain well.
2. Combine lettuce, tomatoes, cucumber, olives and onion in large bowl. Add Greek Vinaigrette, as desired, before serving; toss well. Top with crumbled Feta cheese.
