Celebrate National Pancake Month

Another Broken Egg celebrate National Pancake Month with two famous southern-inspired pancakes: Sweet Potato Pancakes—Jumbo cakes topped with cinnamon marmalade infused syrup, spiced pecans and whipped cream PLUS Bananas Foster pancakes—Classic New Orleans style cakes with sauce made with bananas, pecans and whipped cream.

Sweet Potato Pancakes:

1-1/2 cups flour

3 TBSP sugar

1TBSP baking powder

1/2 tsp salt

1-1/4 c milk

1 c sweet potato purée

1/2 stick of butter, melted

2 eggs

Dash of vanilla

Whisk together until blended. Cook in skillet or griddles on one side until batter bubbles and start to break. Flip to other side, cook until golden brown. Top with toasted pecans and whipped cream or favorite topping.

Bananas Foster Pancakes

(Basic pancake recipe):

1-1/2 cups flour

3 TBSP sugar

1TBSP baking powder

1/2 tsp salt

1-1/4 c milk

1/2 stick of butter, melted

2 eggs

Dash of vanilla

 

Bananas Foster Topping: mix together 1/4 c maple syrup and 1/4 cup orange marmalade, pour over pancakes. Top with toasted pecans and whipped cream.
