Local business owner and mom, Carrie Abbott committed to making a “from scratch” meal for her family every day for a month. She shares her secrets to this easy meal plan.
Simple Taco Salad:
1 lb. Ground Turkey or Ground Beef
1/4 C. of Salsa
1/2 C. Water (if following seasoning recipe)
1 Head of Iceberg Lettuce, chopped
Crushed Tortilla Chips
Cook meat through. Follow seasoning mix instructions, subbing 1/4 cup of water for fave salsa. Cut Lettuce. Fill each bowl with chopped lettuce, taco meat, sprinkle cheese and tortilla chips. Add additional toppings to your taste!
1 lb. Barilla “cut spaghetti” (Kroger) or favorite thin spaghetti broken
4 T. butter
4 C. broth, veggie or chicken
1/2 C. frozen peas
Cooked Chicken, diced
Melt butter in pot. Add the dry cut spaghetti in the melted butter. It’s okay to brown the pasta a little. Remember no water at this step. Add 1 cup of broth at a time, stir until absorbed. Repeat. Add frozen or thawed peas or small veggies as desired. Top with grated parmesan and pepper if you like.
