Here is the recipe for the salad.
1 cup grilled asparagus, cut into 1 inch pieces
1/2 cup roasted tomatoes
1/2 cup steamed artichoke hearts
4 cloves braised garlic
1/4 cup pickled red onion
2 tsp herb infused olive oil
combine all ingredients in a saute pan, warm over medium heat about 2 minutes
cut grape tomatoes in half (long way). Drizzle with olive oil and sprinkle with a pinch of crushed red pepper, salt and pepper. Roast at 450 for approximately 20 minutes or until the tomato is collapsed. Cool completely.
Cover garlic clove in olive oil. Add salt and pepper. Simmer over low heat 25 to 30 minutes. Cool completely.
Julienne onion and place in small mixing bowl. Sprinkle with salt and sugar. Add 1/4 cup red wine vinegar to one cup ice water. Let set for 30 minutes to 24 hours before use for best results.
Herb Infused Olive Oil
1 cup fresh Thyme
1/2 cup fresh Basil
1 cup Fresh Italian Parsley
1 1/2 cup Olive Oil
Mix all ingredients in food processor. Blend well.
Let set 30 minutes to 24 hours before use for best results.
Coat Salmon in salt and pepper on all sides. Heat skillet until smoking hot. Add olive oil. Lay salmon in pan gently and away from you. Sear each side 2 minutes or until golden brown. For thicker pieces, finish in 450 degree oven for 54 minutes.
