Tomatoes and Fish, The Perfect Pair

• Tomatoes and fish are a natural pairing – their sweetness and acidity livens up lean white fish and it cuts some of the fattiness of oiler fish like a mackerel.
• To make a quick, simple dish, sauté a white fish filet that’s been seasoned with salt, in heated olive oil. Cook 90 seconds or until the bottom of the fish fillets are opaque. Then baste the top of the fish with hot oil until it flakes (about 3 mins). Add a 14.5oz can of Red Gold Diced tomatoes w/ basil, garlic and oregano (drained) and cook for 90 more seconds. Serve the filet, then pour some of the tomatoes on top. Sprinkle on some black pepper and you have a quick simple fish and tomato dish.
