The rainbow of crunchy veggies in this dish will fire up your vigilant immune system and help prevent cancer, heart disease, diabetes, obesity and stimulate optimum energy, mental clarity and wellbeing.
*Fibrous cabbage is anti-Cancer, treats peptic ulcers, boosts immune system, and prevents Alzheimer’s. Anti-inflammatory Cabbage is also high in beta-carotene which helps protect against age-related macular degeneration and prevents cataracts.

Rainbow Garden Salad with Noodles and Spicy Thai Almond Dressing
2 Bell peppers, (red & green) thinly chopped-Beta Carotene
4 cups spinach-Anti-cancer, calcium, fiber
*1 cup each red and white cabbage
1 cup carrots, cut into matchsticks-Improves vision, Vitamin C, Beta Carotene,
1 green apple cut into matchsticks-Pectin, fiber, antioxidants, and dental hygiene
3 green onions, sliced thin-Anti-Cancer,
1 cup bean sprouts-Protein and Vitamin C
1 cup gluten-free pasta
2 tbs. toasted sesame seeds for garnish
Handful of cilantro leaves for garnish-Antioxidants, heavy metal detox, Vitamin A & K
Creamy Almond Dressing

*1 cup raw Almond Butter-A good fat, protein, lowers blood pressure, controls blood sugar
2 Tbs. fresh Ginger, grated-Anti-inflammatory
1/2 cup filtered Water
4 Tbs. Fresh Lemon Juice-C & Liver Cleanse
1/4 cup pure Maple Syrup-Intense carb-substitute Stevia if you wish.
3 Tbs. Tamari (wheat-free)
4 tsp. toasted sesame oil
2-3 Cloves chopped fresh Garlic-Anti-cancer and heart health
1 tsp. Chili Flakes -Circulation

• Place all dressing ingredients into a glass jar and shake vigorously. (Not you, the jar)
• Next, combine all salad ingredients into your serving bowl and coat with Creamy Almond dressing.
• Marinate for 45 minutes or overnight in the refrigerator.
