Gluten Free Food Allergy Fest August 23 & 24 is at the Indiana State Fairgrounds. More and more it’s becoming a option and it’s getting harder to tell gluten free items from those with gluten. Gluten free living has come a long way! Many area restaurants offer gluten free menu items. Harry and Izzy’s is one of those restaurants in Indy.
Shelia Cafferty, Co-Founder Gluten-Free Living and Leanna Chroman, Training & Operations Manager, Harry and Izzys and Jeff Smith, Managing Partner, Harry and Izzys have all the details. Plus Shelia shares an easy and delicious recipe.
Gluten-Free Lemon Basil & Chicken Pasta
1 ½ cups of cooked chicken
2 cups of Gluten-Free pasta cooked ( I used Lentil Pasta)
2 small zucchini julienned
1 cup of sliced cherry tomatoes
1 package of Full Flavor Foods packet of cream soup mix (prepared as directed, add lemon juice and basil)
12 oz. of milk (for the sauce)
1 tsp of lemon juice (add to taste)
1 tsp of dried basil
½ tsp of ground black pepper
½ tsp of garlic powder
½ tsp of crushed red pepper chili flakes
Top with Freshly grated parmesan and Fresh Basil
Boil Pasta to al dente consistency. Drain and set aside. Make Full Flavor Foods sauce mix, following directions and using milk in place of water. Add lemon juice, dried basil, black pepper, garlic powder and crushed red pepper chili flakes to the sauce.
Add Sauce into a saucepan, heat on medium heat and add in zucchini, cherry tomatoes, stir and cook for a couple of minutes…then add in cooked pasta. Stir until pasta is hot and coated well with the sauce. Add in cooked chicken. Top with grated Parmesan. Enjoy!
