SPAM Loaded Nachos
1 (12 oz) can SPAM Classic
1/2 an onion
1 can black beans, rinsed and drained
2 cups shredded Colby jack cheese
1 tsp cayenne pepper
1 tbsp chili powder
1 tsp paprika
2 tsp cumin
Optional: salsa for dipping
Heat oven to 350 degrees F. Finely chop SPAM into cubes. Dice onion. Spread chips on a lightly greased baking sheet. In a nonstick pan, on medium heat, cook SPAM and the onion until heated through. Next, add black beans, cayenne pepper, chili powder, paprika, and cumin into the pan with the SPAM and onions. Cook until beans are heated through. Layer bean and meat mixture on the chips. Sprinkle with cheese. Bake in the oven until cheese has melted. Dip chips in salsa if you like!
