Hooray. Thanksgiving is finally here. Family, friends and neighbors gather in the holiday spirit to offer gratitude for their abundance.
Show your tummy some love this year and place a super tasty, healthy dish on the table. Just don’t make a big deal about it. Let everyone tell you how delicious it is, then you can tell them — gasp, it’s healthy.
Then run for your life. But seriously, balance is the key to everything in life, especially when it comes to nutritious food and our health.
Just a little effort is all it takes to mitigate the holiday dietary carnage of excessive intake of sugar, fat, salt, and all the foods everyone loves this time of year.
There are many, but here is my version of a familiar-flavored side dish you might consider preparing this year. It’s full of beta carotene, C, fiber, omega 3, anti-inflammatories, protein, probiotics and pallet pleasing flavor.
6 carrots, shredded — beta Carotene, FIBER
½ cup raisins
½ tsp. vanilla
2 tbs. plain Greek yogurt — protein and probiotics
1 tsp. lemon zest — vitamin C
1 tbs. ground flax or chia seed — FIBER
1 cup FRESH pineapple, chopped well — Bromelain, powerful anti-inflammatory
½ cup walnut pieces — Omega 3 EDA-s, FIBER
½ tsp. cinnamon — regulates blood sugar
Pinch of nutmeg
1 tbs. raw honey or maple syrup — natural carbs
- In a mixing bowl, combine everything together and gently blend.
