Artichoke and Mozzarella Bruchetta
1 lb mozzarella cheese diced in cubes
32 oz of artichoke hearts (dice if prefer)
16 oz roasted red peppers
1/4 cup extra virgin olive oil
1 tablespoon rosemary
1 tablespoon ground rosemary
1 tablespoon crushed red pepper
1 tablespoon italian seasoning
1 tablespoon oregano
1 tablespoon garlic powder
1 tablespoon salt
Mix all ingredients except the bread into a bowl. Make sure cheese and artichokes are coated well. Slice bread into cracker sized pieces and place on cookie sheet. Spoon mixture onto each piece of bread. Place in oven under broiler until cheese is melted. Remove and serve.
