Chef Wendell: Ooh-la-la…Lighten up for a romantic Valentine’s Day Dinner

INDIANAPOLIS (WISH) –  If you consider a thick slab of juicy Prime Rib with creamy Fettuccini Alfredo, Caesar salad, custardy Crème Brule and perhaps too much vino a romantic Valentines dinner you’re correct. However, please note that the same fats that block blood flow to the heart also block blood flow to other, ahem, parts of your body. (If you smell what I’m cookin’) Yes, for decades this menu of lovers has been a traditional prelude to many a romantic rendezvous. However, it could end up an assault with a dead weapon. Eat light and don’t tax your temple with hard-to-digest foods that sap your vital energy and render you unfulfilled.

I’m using REAL butter, so don’t be shocked. It’s vastly more nutritious. Why? Cow’s digestive systems were not designed for corn. We shouldn’t mess with Mother Nature. Cows were created to eat grass not subsidized corn genetically infused with Round-Up herbicide which is showing up in nursing Mothers Milk across American.“In the first ever testing on glyphosate herbicide in the breast milk of American women, Moms across America and Sustainable Pulse have found ‘high’ levels in 3 out of the 10 samples tested. The shocking results point to glyphosate levels (Round-up) building up in women’s bodies over a period of time, which has ‘until now’ been refuted by both global regulatory authorities and the biotech industry.”http://sustainablepulse.com/2014/04/06/worlds-number-1-herbicide-discovered-u-s-mothers-breast-milk/#.VNpqr_nF-SoMushrooms Marsala With fresh herbs and PastaServes 4Try this instead of artery clogging Fettuccini Alfredo

1 # Barilla Plus Pasta

1 # fresh assorted shiitake (de-stemmed), oyster, & cremini mushrooms-cleaned of dirt

4 cloves of minced, fresh garlic

Himalayan salt

½ tsp. black pepper

4 Tbsp. REAL butter

1/3 cup Marsala wine

Pinch each of chopped fresh or dried thyme and oregano

• Prepare pasta according to package directions. Keep it al dente’. (a little firm in the center)

• Prepare mushrooms. (Separate the oyster mushrooms into smaller bite size portions. Slice stemmed shiitake and cremini into small slices)

• In a large sauté pan over high heat, briefly sauté the mushrooms, garlic and herbs in butter.

• Reduce the heat to medium-high. Stir often. Tasty mushroom au jus will seep out and flavor the sauce. Stir so the mushrooms are coated with their own sauce, and sprinkle salt over them.

• Add Marsala to the pan and increase the heat to high. Toss to coat the mushrooms well. Let sauce reduce by half.

• Turn off heat. Add thyme and oregano and gently toss to mix.

• Serve promptly.
