Make Your Own Salad Dressing

1. Slim down your salad and add flavor for less than 50 calories per serving.

2. Trans fat, sugar, preservatives and artificial flavors pop up on nutritional label and wreak havoc on an otherwise healthy green salad.

3. Choosing fat-free varieties is not a great idea, either, because certain nutrients in vegetables can’t be absorbed without fat.

Makes 1 Cup

½ cup buttermilk

¼ cup mayonnaise

Salt and black pepper to taste

2 teaspoons rice vinegar

1 teaspoon garlic powder

1 tablespoon chopped flat leaf parsley

Place ingredients in a mason jar. Screw on the lid tightly. Shake to combine ingredients. Store in refrigerator until ready to serve.Balsamic Vinaigrette

Makes 1 Cup

¾ cup extra virgin olive oil

½ cup balsamic vinegar

Salt and ground black pepper to taste

Optional Extras: Add a spoonful of mustard, minced garlic, minced shallots, minced fresh herbs, a spoonful of honey or brown sugar

Combine olive oil and vinegar in a mason jar with a tight fitting lid. Add salt and black pepper. Screw on lid and shake vigorously. Dip a piece of lettuce into vinaigrette and taste. Then adjust the salt and pepper to your liking.Honey Mustard Dressing

Makes 1 cup

¼ cup mayonnaise

1 tablespoon prepared mustard

1 tablespoon honey

½ tablespoon fresh lemon juice

In a mason jar, with tight fitting lid, combine all above ingredients. Screw on lid and share vigorously. Store in refrigerator until ready to serve.Raspberry Vinaigrette

Makes 1 cup

½ cup white wine vinegar

¼ cup extra virgin olive oil

¼ cup fresh or frozen raspberries

2 teaspoons honey

Place above ingredients in blender or food process and blend until smooth. Pour into a mason jar with a tight fitting lid and store in refrigerator until ready to serve.
