Beyond the Shortcake: creative ways to use strawberries

Heather Tallman, aka Basilmomma, shares some unusual ways to incorporate strawberries in your summer dishes.

Strawberries are coming in season. Here are 2 ways to use them up outside of making strawberry shortcake!

Oven Dried Strawberries

Oven dried strawberries are a tasty and portable snack that anyone can make. The best part is they are cheaper than store bought! The more sweet and flavorful, the better they will taste dried. So this is a great use for your local harvest.

Wash strawberries

Remove green top and cut in half.

Arrange strawberries in a single layer on a parchment lined baking sheet.

Make sure strawberries are cut side up and not touching.

Place cookie sheet in a 200 degree oven for 3 hours.

Periodically turn the baking sheet to make sure they dry out evenly.

Allow to cool completely and place in a airtight container at room temperature.

Creamy Strawberry Lemon Dip

2 C strawberries, pureed in a food processor

6 oz cream cheese

zest of 1 lemon

1 small container of vanilla Greek yogurt

1/4 C powdered sugar

Combine all in a large bowl using a mixer.
