Fresh ideas for Indiana sweet corn

We are making Indiana sweet corn that much better this morning on Indy Style! Heather Tallman, aka Basilmomma, shows us a way to savor summer in the cold winter months and how to “butter it up” with a little flair!

Here are today’s recipes!Basil Chive Butter

• 1 stick of softened butter

• ½ C chives, chopped

• ⅓ C basil, chopped

• pinch of salt/pepper

Cilantro Lime Butter

• 1 stick unsalted butter, at room temperature

• ¼ cup chopped cilantro leaves

• 1 lime, zested and juiced

• 1 teaspoons salt

• ½ teaspoon cayenne pepper

Everyone has made or eaten some form of corn and bean salsa- but have they tried sweet corn and BLUEBERRY salsa? This is a quick preparation and a definite conversation starter. Eat in a chip, on a fish taco or with sliced grilled chicken or pork. Talk about cooking IN season!

Blueberry and Sweet Corn Salsa

4 tsp olive oil

1 C fresh blanched sweet corn kernels

1 C fresh blueberries

1/4 C chopped sweet onion

2 TB chopped fresh cilantro

1/2 Medium jalapeno pepper

salt/pepper

Juice of 1 lime

zest of 1 lime

Combine all ingredients and serve.
