INDIANAPOLIS (WISH) – Making macaroni and cheese from scratch can be so easy and significantly healthier than those generic-boxed versions.
Studies show making a nutritious lunch the biggest meal of the day over dinner can increase energy, promote weight loss and a higher metabolism.
Here’s a simple version of a souped-up, highly nutritious American classic lunch.
Easy Mac & Cheese
1/2 cup Daiya cheddar style shreds
1/2 cup Daiya mozzarella style shreds
1 cup chopped green onion
1 Tbsp. ground flax or chia seed
1 lb. Barilla Plus macaroni (Less white flour)
1/2 cup “unsweetened” almond, coconut, hemp or cashew milk
2 tbsp. Grass fed cow butter or EVOO
Himalayan salt and pepper
• Boil macaroni.
• Drain and add all ingredients.
• With a wooden spoon, mix till complete melted.
Suggestions for added goodies
• Cut up “meatless” hot dogs
• Shiitake mushrooms
• Caramelized onions
• Tuna and frozen peas
• Frozen mixed vegetables
• Ground flax or chia seeds
• Blanched broccoli florets
