Healthy eating with winter fuel in a bowl

Dinner in a bowl! Tracy and Amber chat with Becky Hostetter of the restaurant, Duos! Becky walks us through the road of enjoying the “Bowl,” and says with grains, legumes, tofu, veggies and some simple sauces, you can enjoy and relish a Bowl that is never boring, always nutritious, quick, practical and satisfying beyond your wildest taste buds. Becky says a bowl can warm you in the winter and fuel you for the summer. Seasonal and pertinent, Bowls are best!

Here are Becky’s steps for creating the perfect Bowl!

1) Pick a Grain. 2 cups cooked is plenty for 4 folks

*organic brown rice (we like Lundberg Family Farms Short Grain)

*quinoa

*mixed whole grain rice (fun with wehani, wild and brown rice mix available at most stores these days)

*whole grain cracked wheat (aka bulgur)

2) Pick a legume: 3-4 cups cooked legume plenty

*black beans

*pinto

*lentils

*garbanzo

3) Pick some Veggies and Herbs

*raw or sautéed greens are really a must: spinach, kale, mustard, Swiss chard, collards

*red bell pepper

*scallion

*carrot

*avocado (Well, we all know this is not really a veggie, but come on!)

*tomato

*cucumber

*mushroom

*turnip

*radish

*maybe something pickled….why not?!

*cilantro, basil, parsley, mint,

4) Extra protein, no problem!

*soft boiled egg

*hardboiled egg

*baked tofu

*chicken

*pork

*seafood…all sorts

*nuts and seeds (toasted or not!) I like to add Dukkah, a Middle East spice and nut mix

5) Sauce it. I cannot stress enough at how you can play here. Just experiment, be free and groove.

*miso

*tahini

*salsa verde

*pico de gallo

*chipotle

* yogurt

*cilantro chutney

*harissa (North African garlic chili sauce)

6) Garnish

*sprouts

*micro greens

*seeds

*sprig ‘o anything

You can put things in nice little bowls and let your guests have a go at all the goodness. Or you can just wow all with your own beautiful presentation.
