From pasta to sauce, how to cook an authentic Italian meal

Pasta, tomatoes, parsley, Parmesan cheese… all the classics are here in the Indy Style kitchen this morning! La Dolce Vita’s Laura Wilson shows us how easy it is to make homemade pasta and gives us details on her upcoming Italy culinary tour and how YOU can go with her!

Here is today’s recipe:

Fresh Pasta

Authentic:

1 C semolina flour

1 C all purpose flour

2 lg eggs

2 t salt

2 t olive oil

3 T water or a bit more

Food Processor:

Combine all ingredients and process until moist, tiny pellets. Press the dough into a flat cake. Wrap in plastic and let rest for at least 15 minutes.

Divide dough into two or three pieces and knead by hand briefly, adding all-purpose flour to keep from sticking if needed. Flatten one piece of dough and feed it through the feeder. It may come out broken; do not worry. Keep feeding through until it goes through without tearing. Then fold it in half, dust with flour and feed again, app 6 – 10 times, each time folding and dusting. Set machine to next setting and roll through but do not dust and double anymore. Continue until you have reached the desire thickness. If the dough has the right consistency, it can sit for up to one hour before cutting if needed.

A drier dough is best for noodles. A softer dough is best for stuffing. You can add more flour, but not more water as you work, so better a little wet than too day. The dough should be moist enough to gather in your hand and form disk, but dry enough so it does not stick to table.

Plain Egg Pasta:

3 lg eggs

2 T water

2 ¾ C all purpose flour

Break eggs into a measuring cup. Stir with fork. Add water so the liquid level reaches ¾ Cup. (May have to add a little more) Put flour in mixer with paddle attachment; turn to speed 2. Gradually add eggs and water then mix for 30 seconds. Switch to dough hook and knead for 2 minutes. Remove and hand knead for 1 minute. Cover and let rest.
