Line your cake pan with foil (spray with Pam) or non-stick foil for easy removal.

Gently melt chocolate in the microwave with the butter for brownies and with the cream for the ganache. Stopping and stirring at 30 second increments prevents overheating.

An inexpensive off-set spatula is a terrific tool for spreading batter and icing brownies.

Decorate with sprinkles or seasonal candies like M&M’s for a festive touch.

Freezing the cooled brownies for a half hour makes it a breeze to cut nice, clean slices.

Cheesecake Stuffed Strawberries

Toast nuts in the oven or in a sauté pan to improve their flavor and texture. Watch carefully so they don’t burn.

Use a small melon baller or paring knife to core your berries.

Cut a thin slice off the bottom of the strawberries to help them stand upright.

To fill the berries, use a zip-topped bag with the corner cut off for easy piping.
