INDIANAPOLIS (WISH) – Even though it may be Valentine’s Day and chocolate and other less-than healthy food options my be plentiful, it’s still possible to enjoy Valentine’s Day and watch your waistline at the same time. Chocolate avocado pudding is a dish that’s both delicious and nutritional.
Chocolate Avocado Pudding
As counter intuitive as it sounds, this creamy pudding looks and tastes just like the real thing, plus it’s bursting with wholesome nutritional deliciousness.
2 ripe avocados full of mono-unsaturated, antioxidant goodness
3 ¼ tbs.100% pure, locally sourced maple syrup
Note: No Aunt Jemima or Mrs. Butterworth’s. They are 100% high fructose corn syrup, proven to cause obesity, liver cancer, and diabetes
1 tsp. Balsamic vinegar
2 tsp. vanilla extract
2/3rd cup cacao powder
Pinch Himalayan Salt
• Toss everything but the syrup into a food processor and blend till creamy.
• Add the syrup a little at a time to be sure you don’t make the pudding too soupy.
• Pre-portion in pudding cups and garnish with chocolate dipped berry.
• Chill till service.
Chocolate Strawberry Dipping Sauce
6 oz. semi-sweet chocolate chips
Double boiler / sauce pan
Wax paper sheets
9 x 13 baking sheet pan
• Put a pot of water on the stove over low heat and insert a metal or glass bowl that will hang above the water but not touch it. You want a snug fit so heat cannot escape.
• Add the chocolate and wait till it begins to soften.
• Wisk till smooth. Turn off heat.
• You are ready to remove the bowl and begin dipping.
Note: if as much as a drop of water hits it, the sauce will harden instantly.
• On a wax paper covered sheet pan, place each dipped berry. When finished, place tray in refrigerator to allow chocolate to set.
• When they are set, inject liquor into the center of each.
• Serve and enjoy in moderation.
