Heart-healthy recipes from Firefighter Tim

Who says eating healthy can’t be delicious?! Firefighter Tim shows us how to make a vegan enchilada, along with an oatmeal peanut butter cookie with dark chocolate chips. Tim says both are good heart healthy option for this heart healthy month!

Vegan Enchiladas


1 minced red onion
1 cup diced tomatoes
1 1/2 chopped red pepper
1/2 chopped jalapeño
1 tbs minced garlic
1 tsp cumin
2 tbs chili powder
1 tbs maple syrup
Salt and pepper to taste
Pinch of cilantro
1/2 cup vegetable broth
1 can black beans
1 can pinto beans
Your choice of favorite tortilla shell: whole wheat, corn, flour

Enchilada Sauce

1 jar salsa
1/2 cup coconut milk
1 tbs chili powder
Drizzle of maple syrup


1: Preheat oven to 375.
2: In large skillet, heat medium/high heat and add a little vegetable oil. Add onion and peppers and sauté for 3 min, next add tomatoes, next add minced garlic, cumin, chili powder, salt, maple syrup, pepper, and cilantro, and mix and sauté for 3 min. Stir in 1/2 cup vegetable broth, and can of black and pinto beans. Sauté for 3 to 5 more min.
3: Spoon the mixture into tortillas; roll up the tortillas and place in baking dish.
5: In another saucepan, combine salsa, coconut milk, chili powder, and maple syrup and heat and mix well. Pour over rolled tortillas.
6: Bake for 20 min.

Vegan oatmeal cookies


1 cup oat flour(ground oats)
1 cup oats
1 banana
3 tbs coconut oil
1 1/2 tsp brown sugar
A pour of maple syrup
1 Tbs honey
1 Tsp baking powder
Pinch salt
Pour or two of almond milk creamer
Quick pour of coconut milk
1/2 cup raisins
1/2 cup dried cranberries
1: Preheat oven to 350.
2: Mix all ingredients in large bowl.
3: Scoop small clumps of dough onto baking sheet lined with parchment paper.
4: Bake for 12/15 min.
