Celebrating women-owned businesses in Indy with Delicia & Northside Social
Did you know that today is International Women’s Day?! We did, and we’re celebrating the honor with restaurant owner Nicole Oprisu and Yelp’s Brittany Smith! Nicole shares what it’s like to be a woman in the restaurant industry, the challenges she’s faced and why teamwork is such an important aspect of what she does.
Here are today’s recipes:Summer Crab Cakes
David Bradley, Head Chef
Makes 10 cakes
2 LB Jumbo Lump Crabmeat
1 Cup Roasted Frozen Corn
2 T Roasted Red Bell Pepper Diced
1 cup Hellman’s Mayonnaise
2 T Parsley Chopped
½ T Old Bay Seasoning (or creole seasoning of choice)
Juice of ½ lime
Add all of the ingredients but crabmeat in a bowl and mix well. Gently fold the crabmeat into the mixture.
Cook in a cast iron skillet (or non-stick) on Med-High for 3-4 minutes per side. Serve with your favorite dipping sauce or over mixed greens lightly tossed in Olive oil, salt and pepper.Aqua Chile
Serves 4
½ LB Sea Bass(or preferred White Fish) cut into small cubes (you can prepare this raw or marinate for 2 minutes in lime juice)
½ LB Spanish Octopus (poached for 5-10 minutes)
½ Cup Julienned Fennel
½ Cup Diced Jicama
½ Cup sliced Radish
½ Bunch of Cilantro JuliennedBroth:
2 TBS Chipotle Peppers
2 Cups Fresh Raspberries
10 Mint Leaves
½ t. Salt
½ t. Fresh Ground Pepper
Lime Juice to Taste
Blend all of the broth ingredients in a blender, puree and strain.
Toss all other ingredients in a large bowl. Add broth until the desired amount.
Enjoy with Baked Tortilla chips
