Celebrate Cinco de Mayo with these easy dishes

Hola! It’s Cinco de Mayo time! Food and Lifestyle expert Parker Wallace sets up a gorgeous spread in the Indy Style kitchen to bring us a variety of flavor and flair to tonight’s celebrations everywhere!DISH #1:Layered Burrito Bowl with Creamy Chipotle AioliIngredients (for Burrito Bowl)

Taco/Fajita sized flour tortillas

Spanish rice or farro

Diced Chicken or Steak

Can of drained black beans

1 tsp chili powder

1 tsp cumin

Guacamole

Salsa

Roasted corn

Cotija cheese or Mexican crumbling cheese

Diced jalapenos

Chopped cilantro

Cherry tomatoes halved

Directions

Preheat oven to 375.

Spray muffin tins with cooking spray and press tortillas into the bottom of the muffin cups.  (Tortilla will fold in on the sides– just press around so there is a cup shape formed.)

Bake tortillas for 10-12 muffins until lightly browned and hardened.  Let cool.

Build your burrito bowl by beginning with a layer of rice and alternating your favorite ingredients– black beans, diced chicken or steak, guacamole, salsa, diced jalapenos, tomatoes, cilantro and top with cheese.

Serve hot or cold.  Season with salt and pepper to taste.Ingredients (For Creamy Chipotle Aioli)

¾ cup mayonnaise

2-3 Tb adobo sauce (from a can of chipotle peppers)

1-3 Tb honey (depending on how sweet you want it)

Squeeze of lime juice

Pinch of kosher saltDirections

Mix together until smooth and drizzle on top of finished burrito bowls.

  • Put flour tortillas in muffin tins and bake at 375 for 15 minutes. They will come out in fun shapes – and make edible bowls!

  • Take a non-traditional “cinco” dessert – and make it festive!
  • Cut a chipwich (cookie ice cream sandwich) in half – dip it in dark chocolate – and coat the top with nuts or sprinkles. It will turn a decadent dessert into a little taco!

DISH #3: Cinco Citrus Margarita

  • It’s not a cinco celebration without a signature cocktail!
  • The Cinco Citrus Margarita is made with sparkling white wine, tequila, orange juice, grapefruit juice and lime juice. Serve with a salted rim and enjoy a sweet, fruity twist on the classic margarita!
