2 lbs of ground chuck
1/2 lbs ground pork
1/2 lbs ground veal
2 cups soft bread crumbs
3/4 cups fresh ground parmesan
1 tbl spoon parsley
1 tbl spoon rosemary
1 tbl spoon thyme
1 tbl spoon garlic
1 tbl spoon fresh ground pepper
1 tsp oregano
1 tsp salt
2 eggs
2 tbl spoons sauce
Mix together and form into balls. Place in sauce and cook for approximately 2 hours or until desired texture.
Grandma’s Stuffed Artichokes
Take artichokes and cut off the bottom
Trim the tip of the leaves to remove the sharp top.
In a bowl, combine: 2 cups of breadcrumbs
3/4 stick of butter
a tablespoon or so of olive oil
2 tablespoons of parmesan
1 egg
1 teaspoon salt
2 teaspoons black pepper
1 teaspoon thyme
1 teaspoon rosemary
Mix together and stuff into leaves. Drizzle a little more oil over top.
Place in roasting pan with water in the bottom.
Cover with lid or aluminum foil. Cook at 375-400 degrees until leaves can be removed.
