Annessa tells us there are many uses for pumpkin other than a pie!
“To me, pumpkin puree is like a vitamin in a can – it’s super healthful for you. Plus its ready-to-use; you don’t even have to cook it. In 1/4 cup of pumpkin you’ll find all of the vitamin A you need in a day, antioxidants, vitamin C, iron, and calcium; plus 2 grams of filling fiber – all for just 25 calories. Just one thing this week: add a spoonful of pumpkin to just about anything – your morning oatmeal, vanilla Greek yogurt, even a bowl full chili. Or my favorite way to use it – added to a smoothie. Pumpkin is such a convenient way to add a spoonful of health to your kids’ diet!
