How to make a traditional Danish kringle

400 gr flour (approximately 3 1/3 cups)

250 gr butter or margarine (1 ¼ cups)

1 envelope dry yeast (2 ¼ teaspoon)

(for the yeast) 1 ½ dl of water or cream (approximately 2/3 cup)

1 egg

3 tbsp sugar

½ tsp salt

1 tsp cardamom

* Cut the butter into the flour. Add sugar, salt, egg and cardamom, the activated yeast with the rest of the liquid. Knead the dough lightly until a smooth ball forms. Let the dough “rest” for a few minutes.Filling:

100 gr butter (½ cup)

(We also add some almond paste, optional)

100 gr sugar (½ cup)

2 capfuls of almond extract

Raisins (optional)

* Mix the filling

* Roll the dough into a 1 metre long (approximately 3 feet) log. Flatten until 12-15 cm wide (approximately 4 inches). Spread the filling in the middle of the dough, add raisins. Fold from each side over the filling so that the edges just cover. Press lightly. Form into a “kringle” shape. Let rise for 45 minutes to 1 hour.Topping:

1 beaten egg

Confectioners sugar

Almonds

* Lay parchment paper on cookie sheet. Brush toppings over “kringle.” Sprinkle sugar and almonds on top. Bake 20 minutes at 400 °F. You’ll know when it’s done!
