Ingredients
2 tbsp olive oil
1 onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 tsp cumin
1 tsp paprika
1 can (15 oz) diced tomatoes
4 eggs
Salt and pepper to taste
Fresh parsley for garnish
Directions
- Heat olive oil in a skillet and sauté onion, bell pepper, and garlic until soft.
- Stir in cumin, paprika, and diced tomatoes. Simmer for 10-15 minutes, until the sauce thickens.
- Make small wells in the sauce and crack the eggs into the wells.
- Cover the pan and cook until the eggs are set but still runny.
- Garnish with fresh parsley and serve with bread.
