The Jollof Buka: Traditional Nigerian cooking

The Jollof Buka joined us for a special “Nigerian Kitchen 101” lesson in the kitchen.

Sarah Awodumila, representing the restaurant, guided us through the basics of traditional Nigerian cooking.

The first part of the segment focused on making pounded yam, also known as fufu.

Sarah demonstrated how to mix pounded yam flour into boiling water, creating a smooth and stretchy dough that pairs well with various stews.

She also shared some background on cassava yam and the traditional ways of making pounded yam.

In the second part of the segment, Sarah introduced three different Nigerian stews, all prepared and ready to eat:

Okra Stew- A thick and flavorful dish that complements pounded yam.

Egusi Soup- Made with ground melon seeds and leafy greens, this stew is packed with flavor.

Efo Riro- A popular dish made with spinach and a tomato-based sauce, often served with meats like chicken, fish, and goat.

Sarah also prepared a red stew, a common topping in Nigerian cuisine.

During the segment, the hosts dipped the pounded yam into each of the stews, getting a real taste of these traditional dishes.
