Chef Wendell: Brain food

This weekend while others are eating junk food and watching the big game, Chef Wendell has a healthy alternative: brain food!

Chef Wendell Fowler joined Drew Blair on 24-Hour News 8 Daybreak Saturday to talk about the best brain foods to the difference between wild caught and farm-raised salmon.

He came back a little later to prepare a healthy salmon stir-fry, complete with properly cooked soba noodles. Watch him make it below:

Here’s the recipe for the stir-fry:

‘Brainy’ Teriyaki Salmon Stir-fry with noodlesTo marinate the salmon:

2 tbsp. Tamari wheat-free soy sauce

2 tbsp. mirin

2 tbsp. raw honey

1 tbsp. fresh grated ginger root

1 pound salmon fillets, cubed or strips (skinned)

For the stir-fry:

10 ounces Udon (buckwheat) noodles

2 eggs

1 tbsp. sesame seeds

1/2 tsp. sesame oil

2 tbsp. peanut or avocado oil

8 ounces fresh spinach leaves

2 tsp. grated fresh ginger

2 cloves garlic, crushed

7 ounces snow peas, trimmed and sliced

3 green onions, chopped

  • Combine tamari soy, mirin, ginger and honey in a large bowl, stirring to dissolve honey. Add the salmon and marinate for 20 mins.
  • Cook the noodles according to the package directions. Rinse and drain well.*
  • Whisk eggs, sesame seeds and sesame oil in a small bowl. Heat 1 tbsp. of the oil in a wok or sauté pan on high. Add the egg mixture, swirling to coat the bottom and sides of the pan.
  • Cook for 1-2 minutes, until just set. Slide the omelet onto a plate and roll up. Thinly slice and set aside.
  • Heat the remaining 1 tbsp. oil on medium heat. Stir-fry the ginger and garlic for 30 seconds.
  • Drain the salmon and reserve liquid. Stir-fry for 1 minute.
  • Add the noodles to the pan with the snow peas and spinach and reserved marinade. Stir-fry for 2-3 minutes. Remove from the heat.
  • Top with the sliced omelet and green onion.

*Soba noodles cook much faster than wheat pasta. Don’t overcook.
